Experience the Culinary Journey at Nómada
If you're craving the vibrant flavors of Mexico without the need for a passport, look no further than Nómada, the latest culinary venture by Chef Alex Carballo in Carlsbad. Set to open soon, Nómada promises an escape into Mexico's rich and diverse regional cuisines—from the sandy beaches of Baja California to the mountainous terrains of Veracruz. Inspired by his journeys, Carballo has curated a menu that features Oaxacan moles, mariscos from Sinaloa, and the renowned Caesar salad originating from Tijuana's Restaurante Caesar.
Nómada: A Celebration of Community
Beyond its menu, Nómada’s design reflects a commitment to creating a welcoming community space. Nestled in the Westbluff Plaza, the restaurant’s decor transforms the former Alejandra’s Mexican Cantina into an inviting environment. Diners can enjoy their meals surrounded by rustic Sonoran furniture and palm trees, while fire pits provide a cozy atmosphere to unwind after a day outside. With a capacity to accommodate up to 250 guests, Nómada aims to be a gathering place for locals, offering a contemporary but warm dining experience that encourages camaraderie.
The Talent Behind Nómada
The culinary vision at Nómada is guided not only by Carballo but also by Chef de Cuisine Travis McKinnon, a seasoned professional previously with Fresco Cocina. Carballo, known for advocates of sustainable food practices, and now as the Chef/Partner for Nómada’s parent company, the Grand Restaurant Group, is poised to leverage over two decades of experience to elevate the restaurant scene in North County. This strategic partnership brings forth a fresh culinary direction to the group, known for its successful establishments like Bellamy's and Nick & G's.
Iconic Dishes to Anticipate
One of the highlights of Nómada will be its offerings from a wood-burning oven, which promise satisfying dishes like cochinita pibil—Yucatan pork wrapped in banana leaves, slow-cooked to perfection. Alongside oysters, ceviche, and a seafood tower, tacos will play a major role on the menu, with a variety of flavors including Baja fish and carnitas. Each dish is not just a meal but a journey back to Carballo's childhood, with memories infused into every flavor.
The Bigger Picture
Nómada's opening represents not just the launch of a restaurant but a vision to redefine the dining experience in Carlsbad. With a focus on community engagement, Carballo hopes to host events such as salsa dance nights in an effort to bring people together through food and culture. This reflects a growing trend within the restaurant industry: customers are increasingly seeking spots where they feel they belong beyond just the food they consume.
The soft opening is scheduled for December 20, 2025, allowing locals to sample dishes ahead of the grand opening on January 16, 2026. With brunch on weekends, a weekday happy hour from 3 PM to 6 PM, and daily dinner service, Nómada presents a flexible option for everyone—from casual diners to those celebrating special occasions. It's not just about the food; it’s about creating lasting memories.
